How this quick Paleo zucchini soup recipe made me happy

I got home on Sunday afternoon and had a bunch of work I needed to get finished.  I wanted something quick, nutritious and filling so I busted out with some fresh vegetables from my mom’s garden, some grass fed butter, and viola!  Fresh cream of zucchini soup.  It’s Paleo, bulletproof and is a great recipe for any weight loss program!  If only the cavemen had a Vitamix!

Chopping veggies takes about 10 minutes and cook time is 10 minutes.  Blend time is about a minute so the whole thing takes about 21 minutes.  Be sure you make enough to put in the fridge or to freeze for later.  That way you can be efficient in cooking and meal planning.  I had two days worth of lunches at the acupuncture clinic!

Sorry I didn’t take a picture of the soup!  It was so yummy I just plain forgot.  Big whoops.


Ingredients:

2 large zucchini’s 

1 bunch of greens (I used beet but kale, chard, collards or any others will do)

1 medium red onion

3 cloves garlic

1 cup water

1/4 cup grass fed butter (about a half stick)

Salt to tast

Directions:

  1. Chop red onion, garlic, zuchinni and greens.

2. Saute with onion and garlic with butter until onion starts to turn translucent.  Add Zucchini.  Add greens.  

3. Saute a few minutes more and pour in your trusty Vitamix or blender.  Add butter and water and blend.  Add more butter if you want it to be creamier.  Add salt and serve garnished with avocado and cilantro!
