If you’ve gone gluten free it can be hard when  those old yet familiar cravings show up.  The good news is that just because you’re gluten free doesn’t mean you have to go without those yummy Sunday morning pancakes.  Even better news is you won’t get a carb heavy hangover with these protein and fat heavy cakes.   I calculated the nutritional data for the recipe and broke it into 2 servings.  I have to admit I have on occasion eaten an entire batch of these yummy cakes myself  (after a long surf) so beware.  They can be made thicker or thinner depending on the milk/flour ratio...
